Brown the ribs on all sides, add carrot, celery, onion, garlic cloves, and peppercorns. Deglaze the pan with a dry red wine and an inexpensive balsamic vinegar. Cover with beef stock (if you don't make it yourself, use half beef broth and half water as store-bought broth is too salty) and braise for 4-5 hours.Pics? How did you cook them? I did some in a Dutch oven recently, marinated and cooked in zinfandel. Delicious, but even better tasting on day 2.
Oh goodness gracious, that looks amazing. I'd imagine a whole bison is fairly hard to get a hold of on short notice, not to mention the amount of space needed for a spit set up of that size. However, that would be a phenomenal/epic tailgate if someone managed to pull it off.
