Go to drink at a bar?

Back to the OP’s question, it’s either some kind of whiskey (bourbon most often) on the rocks or else I’ll go for a Manhattan. I love the Old Fashioned at home, but many bar OFs are way too sweet.
 
That said, last night I was at a hotel bar and had a Boulevardier (think Negroni, only with bourbon) with muddled espresso beans, which was pretty 🔥

If it’s a well-stocked cocktail bar and I’m not trying the regional or bar specialty, my answer is Paper Plane if I’m feeling brown liquors or Aviation if I’m feeling clear liquors. If it’s a bar that is a little thin on mixers, I’ll ask if they have red Dubonnet Rouge, Punt e Mes or Carpano Antica if they ask “what’s that?” or say they only have Martini & Rossi I’ll say Godfather but if they have a quality red vermouth I’ll go Rob Roy when in the mood for a brown liquor. If I’m staying with a clear liquor in a mediocre bar I’m doing a dirty martini but with red vermouth or Dubonnet. And if I’m in a %*%*y bar where the ingredients Need to be in the name of the drink I’m doing a Jack and Coke or Gin and Tonic with a lime or lemon wedge.

Winter: Manhattan. Whatever Rye looks best on their list.
 
I generally don't go to bars that would have whiskey good enough to sip. Something like bulleit is more fun with coke.
Try it with club soda. You can actually taste more of the bourbon.

If we're at a good cocktail bar, it is usually an old fashioned. Otherwise just boring vodka soda.

I'm usually a vodka and Diet 7UP guy. Brown liquor is usually reserved for home. My favorite two haunts carry Diet 7UP so that is what I get 97% of the time

Usually whatever version of an old fashioned they have, especially if it's smoked. Also love a good Sazerac because I don't typically have all the ingredients for that at home.

Most places it's just whatever local beer on tap that looks the best.

I was actually at a pretty popular place the other day and I heard the bartender yell to one of the patrons "I'm out of Grey Goose". I was like WTF?!?? Why would you run out of that? Maybe people in that establishment don't drink it? That seems like bar ordering 101 to me?
 
Basil Hayden on the rocks normally. Sometimes Jameson.

I like an old fashion or a manhattan too. In the summer time vodka and diet 7up when it's warm out.

A Paper Plane requires Amaro Nonino and an Aviation requires Crème de Violette, both of which are stocked at my house plus excellent to good cocktail bars with “full bars”, but no standard restaurant bar carries those. At most Restaurants, smaller hotel bars, theme park bars and smaller dive bars they won’t carry the ingredients necessary for my favorite drinks. That’s when I have to dip down to more simple cocktails with common ingredients like a Rob Roy.
 
I prefer an Ark of the Covenant if made properly. Make sure not to look at it.
 
Old Fashioned. Naughty Gal in Madison had the best one I have had from a bar. Not sure why or how, possibly their brand of bitters, but there is a slight cinnamon bear after burn with it. Odd, but fantastic. No pic wife makes our own bitters, and we are trying to duplicate it but coming up short.

Was it brandy? Those hosers typically use brandy instead of whiskey in their old fashioneds. And then top it with soda or squirt.

This. I generally go for whatever good craft beer is on tap, but if there's nothing that strikes my fancy then I'll go the old fashioned route, and the smoked ones are fantastic.
 
Mostly tap beer,.. during the Summer an occasional vodka and tonic is nice.

The Paper Plane is a riff off of a much older cocktail called the Last Word which was a favorite of mine until I tried the better iteration. I came across it in what I call “The Bible”.

Regarding Cocktails is DEFINITELY the best cocktail recipe book I’ve come across not just in the modern era, but for all eras. Mainly because there’s 85 recipes and a 100% hit rate (so 85 out of 85 recipes are at least good and tasty if not amazingly good). It’s all well-balanced recipes with nothing overly sweet OR overly tart or alcohol forward. I highly suggest you pick up a copy of this book. Even Smuggler’s Cove which is considered the “Bible of Tiki Drinks” is only maybe a 60-70% hit rate with me.

You’ll definitely want to pick up a bottle of Amaro Nonino and a copy of Regarding Cocktails.
 
If I'm driving, beer.

If I'm done driving and at my hotel bar trying to get blasted then pour me a long island iced tea.
