There are other acceptable types of sausage. i.e., Conecuh.You should specify ANDOUIE sausage. That and shrimp are my go to.
Good call on the crawfish. I see it more in ettouffe in my area.everything on the list plus crawfish, onion, bell pepper, celery, rice, hot sauce and a cold Guinness to wash it down !!
