
A "fatty" is a stuffed meatloaf made from sausage or beef, often wrapped or weaved with bacon (as above), and slow smoked to meat-overload perfection.
I've made three different kinds:
(1) breakfast fatty: Ground sausage roll stuffed with eggs, cheese, caramelized onions and potatoes, and of course, more bacon.
(2) Italian fatty: Italian ground sausage stuffed with mozzarella and ricotta cheese, and diced pepperoni. Bacon is a nice addition.
(3) Cheeseburger fatty: As the name implies. Hamburger stuffed with cheese and caramelized onions, and of course, more bacon.
You could literally do anything you can imagine. Chinese fatty, Mexican fatty, macaroni and cheese fatty... about the only thing a fatty can't be is vegetarian.
Anybody else done this? And if so, do you have your cardiologist on speed dial?
