So god created Adam and Eve and they did the dirty deed and had offspring that populated the planet. How does one take two people and populate a planet without having incest. Seems like a ban should be had on bible?

Yeah, Genesis is not a good start for a book that is supposed to be the divine inspiration of an omnipotent being. We start with just Adam. Then we add Eve. They have Cain and Abel. Cain kills Abel - which means an astonishing 25% murder rate in the earliest days of civilization! God might have wanted to re-evaluate his whole plan at that point.
Anyway, Cain then moves to another town and takes a wife.

God is all an all knowing, all powerful entity that controls the entire universe. Yet, God is greatly concerned with the actions of a bunch of people on planet Earth.
And with the three major western religions God is especially concerned with a rather undesirable section of land in the Middle East.

Neither creation story (the one in Genesis 1 or the completely different one in Genesis 2) are scientific. They are creation mythologies, read them as metaphor.
After Seth was born he almost assuradly had incest with his sister. Then the next generation lay with their cousins. And then the next with their 2nd cousins and so on. Only then did God command that there be no more incest. Yep, its a icky story, but you can handle it now that your sister is off limits.
