I’m huge fan. And unfortunately Chuy’s the only reliable source of Hatch chili items in Tallahassee closed due to the early parts of the pandemic and locals choosing to eat local %*%*y Tex Mex like El Jalisco and Los Compadres instead of really great TexMex.

A few places were roasting them last weekend but this weekend and the next 3 is peak Hatch Chile season here. Even McDonalds is offering free Hatch Green Chile on breakfast sandwiches here.

I have a local market just south of me that roasts them on site with a really good heat. Not painfully hot but spicy enough for a small sweat on your brow. I will make some salsa, chicken enchiladas, pizza, green chile lasagna etc over the next few weeks and freeze enough chile for a year.

I will most likely go overboard as we are moving to Montgomery, AL next year.
