Made some homemade mac and cheese yesterday

Me and the (no pic) daughter made homemade mac and cheese yesterday.

We used monterey jack, mozzarella, gruyere, and parmesan.

We also used cavatappi pasta along with bacon and chicken.

Finally, we made homemade bread crumbs from a loaf of french bread.

It turned out really good.

Please ignore the crumbs in the bottom right - yes, they've since been cleaned up!

For reference, it's a 12-inch iron skillet.

Sad college confession - We came home drunk one night and were hungry, so we made Hamburger Helper without any hamburger - just late-night "helper".
Did that but chopped up a couple hot dogs in it a time or 10. Not my proudest moments but when young broke and full of something other than money you do what it takes.

I made a mac & cheese recipe a bunch of years ago when I lived in nyc. Roux is made from bacon fat. There was caramel iced fennel in it, which is a really good note. And four cheeses. I got all the ingredients from Dean & Deluca. I made two batches (hosted a dinner). It was like $250 freaking mac & cheese. /csb
