It's funny I have some loose connection to each of those shows. They shot a season 3 episode of the Americans at my apartment in Brooklyn. Imade $4K for that. I used to promote Yellowstone when I was an art director at Paramount Network and my buddy color corrects Succession. I've only watched Succession which I recommend for what it's worth.

Sopranos and The Wire? I'm not familiar. I should check those out.

Obviously it depends on what you like. Me, I'm kind of a character and dialogue geek. The plot doesn't seem to matter as much if you don't have really good characters and dialogue.

To that end, I give you my A list -

The Newsroom
The West Wing - oldie but still relevant. First few seasons are incredibly good.
The Blacklist - first few seasons
Breaking Bad
Better Call Saul

For those that enjoy the odd and the stupid -

Comedy - Brooklyn 99 is the funniest show I've ever seen. Classic stupid humor.
Weird/strange/bizarre - The Umbrella Academy

Others that I liked, but not the A list -

Chernobyl
Star Trek Picard - for Trek junkies
Ted Lasso
The Marvelous Mrs. Maisel

I recommend any one of those shows!
 
The Americans and Succession as already mentioned. The Bear is top notch.

Halt and Catch Fire is also in my top 5 of all-time. Superb acting.

Going to list Station Eleven again in case this becomes a go-to searched streaming thread for anyone. 10 episode miniseries. A flu wipes out 99.9% of humanity and series follows a group of survivors traveling as a Shakespeare troupe performing for survivor settlements around Lake Michigan.
 
Another idea for a comedy if you haven't seen it: Party Down. There are three seasons, two from 2009-2010 and a reboot season in 2023. Follows catering company staffed by Hollywood wannabes in LA.

Bloodline was a pretty good show on Netflix that doesn’t get mentioned often. I actually saw Norbert Leo Butz (actor in the show) at our local pizza place yesterday at lunch.

Endeavor was a favorite of my wife and I (me). It is on Amazon Prime and Apple TV. (Was carried on PBS here in America before that.)
