Don't make them too complex. Reasonable ingredients you can buy and find easily.

My go to:
Dirty Martini.
2 ounces vermouth
4 ounces vodka
1 ounce olive juice
Put in shaker with lots of ice cubes
Shake the schiz out of it

Serve with 5 olives on a plastic swizzle per glass

Serve in martini glass. Makes 2.
 
Alternatively,
Liberal dose of room temperature mezcal in a cocktail glass. A few wedges of orange or tangerine, sprinkled with Sal de gusano. Sip the mezcal, take a bite of the citrus.
Healthy both mentally and physically.

Captn Mojo - summer drink.

2 16 oz cups.
1 cup empty, 2nd cup 3/4 filled with ice.

2 shots Captain
2 shots Malibu
Fill to 3/4 Orange Juice
1 oz pineapple juice
splash of grenadine

Use the extra glass to mix.

Also very easy to make in volume. I will reuse the orange juice containers and funnel the cocktail back into it for easy cooler storage.

Drinking life hack. For anyone going on vacation, or pools, boating, etc. We always pack our Mira bottles. Mexico, Caribbean vacations, our Mira bottles always make the trip. They float, as long as they aren’t completely full, and they hold their inside temp very well in the heat. They work perfectly for Captn Mojos.

Negroni riffs:

Original negroni is delicious (equal parts gin, campari, sweet vermouth)
Bourbon rather than gin and it's a Boulevardier
Mezcal rather than gin for earthy smokeyness
Sparkling water rather than gin for a lighter Americano
Proseco instead of gin and you've got a Sbagliato
Use a different Amaro on hand rather than campari


Even easier:

Fernet Branca and Coke
Beer of choice paired with shot of Malort
 
Classic margarita.

2 parts tequila - Hornitos Reposado
1 part triple sec - dekuyper
3 parts finest call margarita mix
Splash of orange juice
Lime

Put that in a shaker with ice and shake. Serve on the rocks. Optional mini corona shoved upside down for a corona-rita.

Fortunately, she doesn’t like scotch.
Wifey was a scotch drinker when we met. She had a “fish bowl“ glass at her house that she would pull out. One night visiting college buddies, she went over the line and basically steered clear of the peat for many years.
A few years back, a good friend introduced me to some fairly good scotch, which we pull out on occasion.
Lagavulin for the best of times. Oban and Taliskers for more “routine” get togethers.
Wifey has recently joined me once again.
White Zombie beer from Catawba brewing is a mainstay. Beck’s, Stella Artois, and Cervasa are usually in the fridge.
A fairly inexpensive bottle of red vino is on the shelf when desired.

3 parts finest call sounds way too sweet for me.

I make mine boozy and less sweet

3 parts tequila
1-2 parts Grand Marnier/Combier/triple sec
1 part fresh squeezed lime juice

Variations include mezcal sub, jalapeno hot sauce and habanero tincture (habaneros soaking in vodka).
