What do you consider to be the defining dish when trying a new regional / ethnic restaurant?

For example, whenever I try a new Mexican restaurant I generally chose chicken mole because to be done right it requires time and effort. Jamaican, the jerk chicken. Minnesota, the walleye. Down south, the chicken fried chicken. And, I do know that regions and ethnicities might encompass wildly differing foods.
