You can choose one permanent sport, bring back one old demonstration sport, and one new demonstration sport to the LA 2028 Olympics. What are they?

None of those should be in the Olympics.

Lacrosse because it is from a very small list of former permanent sports, the US is not a lock for gold (Canada has won three of a fourteen possible World Championships and Australia has won silver four times) and has never gotten a true international shot in modern times.

Footvolley was awesome in Rio. Easily the best demonstration sport in my lifetime, (though I did like roller hockey in the ‘90s, it’s pretty dated).

Beach soccer would be a natural at Venice Beach, and it has a huge international following, with many countries that do well but don’t excel in many other Olympic sports (Tahiti, El Salvador, Senegal, Belarus, Uruguay, Portugal).
