The Sex Pistols just effing around warming up for demo tracks with old covers they used to do, Johnny Rotten having forgotten half the lyrics. What a killer tight, balls out young band in their prime:

Hendrix's All Along the Watchtower

Marvin Gaye's I Heard It Through the Grapevine [it was a huge hit for Gladys Knight the year before]

Both Turn, Turn, Turn and I Heard It Through the Grapevine hit #1. All three of these song were totally original and, IMO, brilliant makeovers of the originals.
 
India Arie's cover of Don Henley's Heart of the Matter.

One of my all time favorite songs, I loved the remake almost as much as the original. Lyrics are sensational, that definitely helps any cover.

 
Proud Mary. The original by CCR is fantastic, and the cover by Ike and Tina Turner is vastly different but equally great.
