Habanero cheese with chicken is my go to. Add in some Frank’s buffalo sauce to go with that. You can put that shiat on everything.

Best quesadillas I’ve had were at pancheros circa 1993 or 1994 before they sold out. IIRC, they were good after that too, but I can not attest. Anyway, those quesadillas with tomatillo sauce kill the best grilled cheese I’ve had.
