Peppers, cucumbers, green beans, tomatoes, sunflower plants (so I don't have to look at neighbors garbage yard). Still have plenty of room to plant more
Peppers: No idea
Cukes: Once they get up and going they need a LOT of water!
Beans: They'll grow anywhere without anything special.
Toms: The opposite of cukes. Too much water will cause splitting. Cut back on the water when the fruit gets big.
Sunflowers: No idea.
Spray with Bt regularly to keep the caterpillars away.
If you have room near the tomatoes, basil has similar water and nutrition needs, and makes a fabulous companion plant.

Sounds similar to my garden. Sunflowers will pretty much grow anywhere in the sun in my experience. I usually save a corner for herbs. Thyme, rosemary, basil, sage, chives, dill. That area always smells fantastic.

Mint almost becomes a weed. I grow that in a container when I do so it doesn't spread everywhere
