I just made a top 5 soup today.

Ham and potato in the slow cooker. Chop. Peel. Throw the shit in and wait. Perfection.

I just followed this recipe and added a packet of shredded cheddar in 30 minutes before the end to thicken it up a bit and it was incredible. It's gonna look too watery at first. But man, just be patient and it comes together incredibly. Perfect viscosity!


INGREDIENTS​

  • 8 large russet potatoes peeled and dice into 1 in pieces
  • 2 medium onion diced
  • 4 large carrots peeled and diced
  • A can of sweet corn
  • 2 stalk celery diced
  • 2 pound diced ham
  • 4 teaspoons fresh parsley chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 cups chicken broth
  • 2 cup heavy whipping
  • 4 Tbsp cornstarch
  • 1 cup sour cream

INSTRUCTIONS​

  • Place everything except for the sour cream, cornstarch, heavy whipping cream in the crock pot.
  • Cover and cook on low for 6-7 hours or on high for 3-3.5 hours until the potatoes are the tenderness that you desire.
  • Then stir in the cornstarch into the heavy whipping cream. Stir this mixture and the sour cream into the crock pot.
  • Cover and cook on low for 60 more minutes until the soup has thickened.
