Making Steaks for dinner

j/k NY strips, twice baked potatoes, and bacon wrapped stuffed jalapenos.
Sounds good. However, I have never been able to get the bacon crispy while maintaining some snap in the pepper flesh/skin, so the idea is better than the end result when I do it. Do you have a method?
 
I always thought you grilled a 1” steak for about 3-4 minutes then flip and another 3-4 minutes then rest.

Then you dip in ketchup and bread with Frosted Flakes and then put it in the microwave for 12 minutes.
