Pan fried steak

Due to unforeseen circumstances that’s how I’m making a couple rib eyes in about 30 mins. Any help is appreciated
 
Preheat oven to 400 degrees

Heat up your cast iron skillet

Once hot brush butter (or vegetable oil) on skillet

Place steak on skillet, and turn down heat

5 minutes one side, 5 minutes the other

Stick cast iron pan into oven for 5-10 minutes

Take it out, put it on the cutting board and put tin foil over it and let it rest for 5 or so minutes.

Meanwhile, sauté some onions and mushrooms in that butter and steak drippings

You can make a liquid base of white wine and butter to baste the steaks with as you cook them slowly. That will make it very, very tender.
Or use a butter and Worcestershire sauce and use that to as a thin layer for the bottom of the frying pan.
 
I do not have a cast iron skillet. Damn it. Will this work with a regular skillet?

Sure, just if you plan to transfer it to the oven put the steak on a baking sheet instead of putting your non cast iron skillet in the oven.

Kind of dicey. If you stick it in the oven you are risking a lot of damage to the skillet. Cast iron is about the only skillet I'd stick in a hot oven.

That's why I said not to stick the pan in the oven if it's not a cast iron. Just put it on a baking pan. Work with what you got.
 
Get your pan hot. Oil or butter...sear each side one minute. Turn stove top down to half, 2-3 minutes a side (adjusting for thickness, assuming a 3/4 to 1 pound steak).

I do this in a cast iron, no reason to think it won't work in a teflon/copper.

I actually prefer ribeye in my old cast iron pan over the grill.

I just coat the grill with some olive oil, but salt and black pepper on the ribeye, heat the pan up on high, then quickly sear each side. Then I lower the range to low, put a top over the cast iron pan, and cook it just a couple minutes on low so it’s medium rare.

Freaking. Delicious.

Eh, I have a heavy clad SS pan that I would put in the oven in a second. SS riveted handle, no worries.

That said, hit some garage sales and find an old cast iron pan. Nothing better for making Pizza, Steaks and Corn Bread. It is a must have in a kitchen.

How’d it end up going OP?
I used butter and Worcestershire. I put them in the pan on each side for 5 mins and then in the oven at 400 for about 8 mins...they were actually really good. I would rather use a grill but I think I’ll try this again in the winter time sometime soon. They were very easy to cook. Thanks everyone
 
Depending on size 4 or so min each side

I use @jasonrann family seasoning- which is really good.

I do not put it in the oven- I personally think it dries out the steak. Make sure you let it sit after cooking for 5 min.

Finally, get a cast iron, peasant.

You'll turn that steak into charcoal doing that. Even Trump wouldn't eat it.

Do 1 1/2 minutes per side on the stove then put it in the oven for 4 1/2 minutes for medium rare.
 
Beats me. I got a sous vide machine for Christmas, so I'm never cooking steaks like a chump again. They only touch the cast iron for a minute/side right before they're served.
 
Turn pellet grill onto 170 degrees and smoke for 20 - 30 minutes (I am assuming you have think expensive steaks).

While on the pellet grill get a cast iron skillet hot AF.

Take steaks off pellet grill.

Throw some butter in the skillet.

Sear both sides of steak and cook to desired finish.

(Optional, throw some garlic in w steak on the cast iron)

Reverse sear method
