Depends on the cut. A ribeye should be medium rare to medium to allow the fat to render. Anything less than that and you’re chewing uncooked fat. The leaner the meat the rarer i like it.
This is absolutely correct.

And one thing I would add is that when it comes to ordering, they can easily cook a steak for a minute or two if you send it back, but they have one hell of a time uncooking it.

Depends on the cut. Ribeyes, NT Strips, etc. rare. Nice char on each side and take it off! Fillets, medium rare.

Ah yes, Pittsburgh style. Where the chef places your steak on a plate and chugs a beer and immediately vomits it back out and then proceeds to tell you how awesome the Steelers are for then umpteenth time.
