I don’t eat them either. Those onions mess me up really bad. I let others have my share.

Speaking of onions, my MIL (no pics) makes a buttered onions side dish that's freaking awesome. I modified her recipe and cook it in the smoker all the time.

Basically you just chop up onions in big chunks (no rings) so when they fall apart, they form sort of an oval, spoon-like shape. Then you add a lot of butter and whatever seasonings you like, and a splash of heavy cream. I would imagine you could go wild here with vinegars, liquors, sauces... but the butter and cream combo kicks ass.

She cooks hers in the oven but I like to do this on the smoker in a small cast iron pan that I can wedge into the cooker next to whatever else is cooking. Temperature isn't critical. It's done when the onions get tender. If they've had enough smoke or you just want to hurry them along, cover the pan with foil.

It's freaking yummy.

IMO stuffing is hit or miss. My Grandma no pics has an old school recipe, and I friggin love hers. But at this point, it's kind of more nostalgic than anything else. Back in 2020 I hosted Thanksgiving for myself, little sis no pics, and her bf no pics. I made my own stuffing and it was phenomenal. Far better than my Grandma's that I grew up eating every Thanksgiving.

Then the last two years my sis hosted Thanksgiving and she made stuffing differently both years, and it was trash both years.

This is true. It CAN be good. But the ratio is so bad honestly. I can recall maybe two or three times I've actually liked it as opposed to maybe 32 or more times I didn't. Hit or miss but generally a miss for me based on these results.

My RIPiP Mom did a can but also made cranberry sauce. She also stuffed the bird but always made enough for a side of dressing. Appease the masses I guess.

I guess for me my favorite side is gravy, on everything. It is the tie that binds the meal together.
