Christmas Eve dinner?

Home made cubed pork in red Chile sauce, rice, beans, flour tortillas, guacamole. Turkey breast and ham with green bean casserole tomorrow. Steak and shrimp fondu for the New Year.

We usually go out on Christmas Day to get out of the house, so Christmas Eve is when I make a big meal. In past years I’ve done prime rib, ribeye roast, turkey breast, and a few other things. This year was beef tenderloin for the first time. Made with a red wine mushroom sauce.
 
I made this NYTimes recipe: miso ginger salmon with miso rice/scallion rice. I highly recommend it even if you only want to make the rice and salmon without the bowl.

 
We just put all sorts of apps and small plates down for Christmas Eve and everybody just grazes. No sit-down dinnertime.

Tomorrow we smoke the roast beast.

But for tonight we have smoked chicken wings, ham and/or turkey and/or cheese sliders, shrimp cocktail, bacon-wrapped pineapple bites, a vegetable and dip tray, chips with onion and sour cream dip, various other chips, Christmas cookies, and lots of booze.

We had our big feast on Saturday. Mrs. Lucas just left for UIHC because she was nice and swapped into today for a co-worker with young kids. It’s just me and some leftovers today. If Netflix sh**s the bed during the Chiefs game I’ll really be pissed.

We had 3 gatherings yesterday. The last one was at 7pm in little Millersburg, IA

I was already stuffed from the first two but this gathering was supposed to be just a dessert party. My aunt however made soups and apps as well.

soup of the night. Oyster soup. I think my dad had 4 bowls.
Favorite app. pickled ham and onions
Favorite desert. Raisin cream pie

Visiting in-laws and actually, about the same exact thing as you. Small plate grazing. Shrimp cocktail, charcuterie, and a series of hot apps like crab cakes, chicken cordon bleu poppers, etc.

Today steaks. My SIL got good ones, I’m told. I anticipate being asked to cook them so I came equipped with my own gear.

And yes, I was just asked to cook them. Chateaubriand. Two of them. Going reverse sear. Oven to 122, pull and sear to 132, with my FIL/MIL getting the more done end pieces.
 
We always do Christmas dinner with my in-laws, at their house. Variety of things, from Golden Corral...pot roast, mashed potatoes & gravy, green beans, mac & cheese, and bourbon chicken with rice. Usually a chocolate cake and a carrot cake. Yeah, it's Golden Corral - but my wife's mom is an awful cook, so it beats the hell out of what a home-cooked meal would be.
