Most underrated meat

Pork jowl. When you smoke a whole hog it's called "the pearl". It's the most tender part of the hog and has really nice umami notes.

Honorable mention to beef tongue and jowl.
 
Tri-tip. Is a good beef product that seems like you’d need to cook it as long as a brisket but cooks very fast and is good eats.
