Also called cheesy potatoes in my world. Recipe is
  • 1 (10.5 ounce) can condensed cream of chicken soup


  • 2 cups sour cream


  • 1 teaspoon salt


  • ¼ teaspoon ground black pepper


  • 2 cups shredded Cheddar cheese


  • ⅓ cup sliced green onions


  • 1 (30 ounce) package Ore-Ida® Shredded Hash Brown Potatoes


  • 2 cups crushed corn flakes cereal


  • ¼ cup butter, melted


Directions​

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick spray.

  2. Whisk together sour cream, condensed soup, salt, and pepper in a large bowl. Stir in Cheddar cheese, green onions, and hash brown potatoes until well mixed. Spoon evenly into the prepared baking dish.

  3. Mix crushed cereal and melted butter together in a medium bowl. Sprinkle evenly over the casserole.

  4. Bake uncovered until hot and bubbly, 45 to 50 minutes. Remove from the oven and let rest for 5 minutes before serving.

I use diced onion and not green onion. And Birch's modification looks super intriguing.

I've seen recipes calling for thawed hash browns.
 
I love party potatoes, but I have no need for the corn flakes on top. It adds nothing for me. Same thing when people try to put panko on top of Mac and cheese. Totally unnecessary.

I would argue crust on mac and cheese is a huge demerit. Will I still eat the shit out of it with crust? Absolutely. However, I will probably try to scrape it off before eating.

Leave out the green onions. Gross.

Melt a stick of butter. Add some dried minced onion and garlic powder (Penzey's has a delightful roasted garlic powder, fwiw). Add the can of condensed soup, sour cream, shredded cheese, shredded hashbrowns.

Put it in a slow cooker for like 5 hours.

Goes great with my BBQ meatballs. Also great for breakfast, late night snack, and lunch.

My wife uses diced white onion but green onion would be interesting. She uses the diced frozen hash browns instead of the shredded. Don't think she puts black pepper in it.

I bag of frozen meatballs - Rosina, the Italian style (red bag). Only Rosina or homemade will do.

Sauce is a rough measurement. I don't measure except the brown sugar (sort of).

Combine 2 cups ketchup, 1 cup brown sugar (dark if you have it), ~1tsp garlic powder, ~2tbsp dried minced onion, some beef bouillon (1/2-1 tsp?), ~1tsp Kitchen Banquet seasoning. A shot of bourbon or whiskey if you're feeling fancy.

The Penzeys roasted garlic powder also works well here.

Put meatballs in a slow cooker. Pour sauce over meatballs. Stir to combine. Minimum 4 hours, ideally 5-6. Don't bake - only slow cooker.

You can also use 2 bags of meatballs and use a whole container of ketchup...the 32 ounce, I think. Whatever Fareway has on sale for 2/$4 or 2/$5 sometimes. Don't forget to add more of the other stuff, obvs.
