It seems like everytime I do turn to watch it is a special interest story instead of an actual event.

Not sure what coverage you've watched, they show pretty much all of the competitors in every sport. Watching men's speed skating now, they've shown every heat.
They definitely edit the competitors hard in the snowboarding events compared to their Dew Tour coverage. It’s a shame because everyone can do cool tricks and there’s no guarantee the Americans or favorites will land their runs.

I watched both men's and women's prelims, saw every competitor. Watched men ski jump, prelim and finals, every jump was shown. Watched every heat of the men's 5k speed skating and watched men's and women's skiathon, both races in their entirety. And I haven't seen any "special interest" stories so far.

Now, I'll admit, I skipped the opening ceremonies because those always suck and I refuse to watch figure skating.

Chinese ice dancer has a mullet. They’re also dancing to an arrangement from Kung Fu Panda. This team is awesome.

This olympics has been 1,000 times better than the last 5 olympics on NBC imo. It's been really good.

Brian Boitano isn't skating...so no.
Funny story. We hired a nanny and she had our kids in San Francisco while the wife and I attended business meetings. She was big into figure skating until she got injured as a teen. Her mom was a US skate judge at multiple Olympics and the team mom in Vancouver. Her doubles partner went on to represent the US in the Olympics.

Our son was about four at the time. The nanny was taking him for a walk on Sunday morning and he had to take a dump. Nothing was open. She knew the skating rink was nearby and thought she might try there. Security cut her off at the door and said no one was allowed in because they were doing a private lesson. She saw Brian Boitano and flagged him down. He came over, instantly recognized her. My kid got to take his dump. That's what Brian Boitano would do.
