Breakfast Burritos: favorite fast food and homemade recipe

I’m up at my normal hour but with people staying over I’m going to prep some breakfast burrito stuff. Got some scrambled eggs, some local made mild chorizo, onions, green peppers and I’ll have some sautéed mushrooms for anyone that wants to add them. For me I then add some shredded mozzarella and mild cheddar and then a homemade salsa.

What’s your go to?
 
I live in Houston where breakfast tacos are ubiquitous. My favorite is fresh flour tortillas, egg, cheese and chorizo or barbacoa
 
Every fast food breakfast burrito I've ever had has been mediocre to bad, so I don't get them anymore. At home I use a flour tortilla, eggs, hashbrowns, cheese, ground sausage, bacon, salsa, cilantro lime sour cream sauce.
 
Old Folks medium spice sausage tube (they also have Italian and hot flavors), cook it off, drain the grease. Add Ro-tel can to it, continue cooking.

Cheese, favorite salsa, scrambled eggs, jalapenos of choice, etc...whatever toppings you like, go for it.

Pretty easy stuff. Don't overthink it.

Breakfast burritos are a favorite for me too, whether it’s grabbing one from a fast food spot or making them at home! For homemade ones, I like to scramble some eggs with sautéed veggies, maybe a bit of bacon or sausage if I'm feeling extra, and then roll it all up in a warm tortilla.
 
When I was in the service, we had food trucks on the base before they became like a thing... we called it the roach coach... but their breakfast burritos would blow your mind... they had eggs and peppers and potato chunks, cheese... sausage, they were fantastic.
