This is coming from our resident champion of qc-style pizza so everybody take this with rock-sized grains of salt.The trick, counterintuitively, is to use a pretty sharp, aged cheddar and make sure it is melted evenly. The contrast in the tangy cheese and the sweet pie makes for an excellent culinary experience.
That’s what I like too, especially when I’m drinking.Apples, dried fruit (cranberries, apricots and figs), nuts (pecans and cashews) and some cheese is a regular meal for me.

I do this for snacks at work, cut up an apple and a few pieces of colby and it's really good together. I would think it would be good on a pie also although I've never tired it. I was responding to your surprise of people not liking one type of dairy over another depending upon application. Just substitute melted cheddar cheese for nacho cheese. Cinnamon cereal is at least in the ballpark of the flavor profile of apple pie. Melted cheddar on cinnamon cereal would simply be gross.No, because it is spicy. Cheddar is not spicy and pairs excellently with apples, figs, grapes and other sweet fruits.

I was in the heard of it, haven't tried it, sounds gross camp. I did not pronounce it disgusting although it does sound disgusting. In any event, although it is a risky claim to make in the HROT billionaire renaissance men's club, I would venture to say I've tried and cooked more food in more different ways than the vast majority of men (@FSUTribe76 not included, obviously).But again, you are looking at this in simplistic, not culinary terms.
In cooking, flavor profile, spice level, salt level, consistency and many other factors play into whether things go well together. Thus, talking about nacho cheese on cinnamon cereal compared to melted cheddar on apple pie is an utterly meaningless comp. No one would do the former, whereas many, many people enjoy the latter.
One of my favorite things about cooking/eating is discovering new and intriguing flavor combinations. Maybe you should try it before pronouncing it “disgusting.”
