One of my sons has to work on Sunday so we're doing Father's Day tomorrow.
I have a chicken I split in half and it's dry brining in the fridge as I type this.
I'm going to cook these two bird halves two different ways:
Left side: This one is going to be a traditional BBQ chicken, smoked on the Webber Kettle with the Vortex accessory. I'm using Meat Church's "The Gospel" rub with a very light second dusting of the "Holy Cow" rub. A mix of hickory and cherry for smoke.
Right side: This one is going to be cooked on the "herb bird's nest" on the Pit Barrel Cooker! Only SPG for seasoning on this bird, and no wood chunks. Just herbs for smoke.
I'll be making some Alabama White Sauce (not Malcom's recipe.. mine is more bold -- and I'm going to try some of the "Holy Cow" mixed in there ). That'll work great on both chicken versions.
I'll also make a quick chicken broth with the chicken back, onions, celery and carrots along with herbs. This will form the base for traditional chicken gravy. That's probably only going to be good on the herb bird.
